Inspired by the theme Quiet Summer, this seasonal dinner course celebrates the island's lingering summer through vegetables and herbs from “Our Farm”, locally caught seafood, and the finest ingredients from Okinawa. Thoughtfully prepared to honor the natural character of each ingredient, Shima Cuisine reflects the harmony between the chef's artistry and the island's abundant harvest, creating a dining experience as serene and memorable as the surrounding forest.
